These photos are from the Tomato Workshop hosted by Johnson's Backyard Garden CSA last year! Having failed to create an entry about the event last year, I thought it was appropriate to revisit the event since I have just finished Tomato Sauce Smackdown 2012. This Tomato Workshop was the start of all the tomato madness!
Dozens of CSA members drove out to the new farm location to spend a pleasant morning next to the Colorado River listening to Jesse Griffith demonstrate the stewing and canning of fresh tomatoes.
Jesse had an elaborate outdoor kitchen set-up where he was able to sterilize and actually can various sauces, stews, and salsas in front of us. He was also generous with his time and took many questions from the audience after the end of the session.
All attendees went home with a box of lovely slicing tomatoes, so that they could practice what they learned.
I have gone a bit overboard these past two years, processing upwards of 80 pounds of tomatoes in as little as 3 days. But I am starting to get it down to a science in terms of preparation and minimal disruption to overall kitchen access.
