Carrot Salad

Wow - this is bright, fresh, citrusy and delicious! A great addition to your summer picnic or banquet.







































Carrot Salad

3 large carrots, trimmed, peeled, and shredded
1/2 c dried currants
juice of 1 lemon
juice of 1 orange
1/4 c vegetable oil
1/4 c mint, chopped
1/8 tsp pepper

Toss carrots in a mixing bowl with remaining ingredients. Cover and refrigerate. Serve very cold.
