Sesame Cucumber Salad



Crisp, cold, slightly spicy - what more could you want on a hot summer day?

Sesame Cucumber Salad
Penzey's One

2 cucumbers, sliced
3/4 c rice vinegar
1/4 c water
1 T sugar
1 T garlic, minced
1 T soy sauce
1 tsp sesame oil
2 T sesame seeds

In a large bowl, combine the rice vinegar, water, sugar, garlic, soy sauce and sesame oil. Add cucumbers and toss to coat. Cover and refrigerate for one hour. Toss again. Sprinkle with sesame seeds and serve.
