We enjoyed this so much we ate the entirety of it in two sittings and immediately set out a stick of butter to make it again the next day. How's that for an endorsement? The rum is a lovely addition that you actually can taste in the final product, so, do not omit.
French Apple Cake
Once Upon a Chef
- 1 call-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 c unsalted butter, room temperature
- 2/3 c sugar
- 2 eggs
- 1 tsp vanilla
- 3 T dark rum
- 2 baking apples, peeled, cored and cut into 1/2-inch cube
- Powdered sugar (optional), for garnish
Preheat oven to 350°. Grease a 9" springform.
In small bowl, whisk together flour, powder, and salt.
In bowl of a mixer, beat together butter and sugar until light and fluffy, 3 minutes. Add eggs, one at a time, beating well after each addition. Add vanilla and rum and beat. The batter will look grainy - that's ok.
Add dry ingredients and mix on low until just combined.
Fold in chopped apples and scrape batter into the prepared top. Sprinkle evenly with 1 T sugar. Bake for 40 minutes, or until a toothpick comes out clean. Allow cake to cool in the pan.
